Many of the features of Gtkdial are configurable via the Preferences Dialog (accessed via the Settings... menu):

You may specify a string here which will be passed to the shell and executed when Gtkdial makes a successful connection. Caution is advised when using this option.
Gtkdial automatically executes the instruction in the background, so there is no requirement to pass the '&' character in the string.
You may also override this option with the -e command line option.
